Peep Eggs

2 Protein Servings

Ingredients:
 2 Eggs (hard boiled)
 6 oz 1% Cottage Cheese
Directions:

Peel eggs carefully.

Cut small slice off bottom off eggs so they can stand upright. Set this slice aside.

Cut zig zag pattern around middle of egg to look like it cracked open.

Remove yolk and combine with cottage cheese.

Blend well, and season with Morton Lite Salt to taste.

Transfer mixture to zippered bag and clip corner for piping.

Pipe mixture into the bottom half of the cooked egg whites, piping until over-full to resemble a chick head sticking out.

Using the reserved egg white pieces from the bottom, use a small amount of food coloring to create eyes and beaks. Use these to create the faces.

Top each with its top half.

Spring Chicken

1 protein serving

Ingredients:
 8 oz Chicken breast (boneless, skinless)
 1 Lemon, halved
  tsp Dried crushed basil
  tsp Dried crushed thyme
 Morton Lite Salt and pepper to taste
Directions:

Preheat oven to 400 degrees.

In shallow baking pan, squeeze ½ lemon over chicken.

Sprinkle with half of the basil, thyme, salt, and pepper.

Bake at 400 degrees uncovered for 20 minutes, basting occasionally.

Turn chicken and add the remainder of lemon juice and spices.

Bake 30 minutes more or until tender.

Meringue Cookies

1/2 protein serving

Ingredients:
 3 Large egg whites, room temperature
 3 Packets artificial sweetener
 ¼ tsp Flavor extract (no oil, alcohol, or sugar)
 ¼ tsp Cream of tartar
 Pinch Morton Lite Salt
Directions:

Preheat oven to 250 degrees.

Line a baking sheet with parchment paper.

In clean glass or metal bowl, combine egg whites, sweetener, extract, cream of tartar and salt. Add a drop of food coloring if desired. Beat on medium high until medium stiff peaks form and mixture becomes somewhat glossy. Do not beat until stiff.

Spoon or pipe mixture into 15 to 20 meringues.

Bake for 18 to 20 minutes at 250F. Then reduce oven temperature to 200F and continue to bake for another 18 to 20 minutes, until crisp and tips are just starting to brown.

Turn off oven and let meringues it inside for 2 hours or longer.

Remove and carefully peel off parchment.

Sunshine Pudding

Blend all ingredients together.

Chill for 1 hour and serve.
