 6 oz 1% Cottage cheese
 1 Pkg. QWLC Pancake Mix
 ½ cup Blueberries
 Splenda to taste
 Cinnamon to taste

Prepare pancake mix as directed.

Drain cottage cheese in a sieve.

In a small bowl, mix cheese with sweetener and cinnamon to taste.

In a separate small bowl, mash berries and sweeten if desired.

Place both bowls in the microwave and warm.

Spray a non-stick pan with cooking spray and heat on medium-low.

Pour half of pancake mix into pan, making a thin layer.

When pancake starts to separate from sides of pan, spoon 1/2 of cheese mixture in a line down center of pancake and fold with spatula.

Repeat for second blintz.

Top both blintzes with fruits.
