Fish Tacos

 8 oz Tilapia
 1 Green onionDiced
 ½ Jalapeño pepper (optional if you like heat)
 1 Small tomatoDiced
 ¼ Medium red or green pepper
 Chopped cilantro
 Romaine lettuce chopped
 6” Corn Tortilla(this counts as 2 starches, or you can use half to count as 1 starch)

Rub the fish with chili powder or cumin and lite salt (we like the Mrs. Dash Chipotle Seasoning).

Then cook by either baking it or sautee’ in a pan using the oil free method.

Break apart the fish when it’s done.

Chop the veggies into small pieces.

Warm up the tortilla slightly, then assemble it.
