Ingredients for 1 Portion:
 2 Large Eggs
 1/2 cup Sliced Mushrooms
 1/2 cup Zucchini (cut in thin strips)

Directions:

Separate egg white and yolk. Beat whites until stiff, beat yolks until frothy. Add vegetables to yolks; fold whites into yolk mixture. Pour into a warm non-stick pan lightly coated with cooking spray. Cook over medium heat for 10 minutes. Remove to shallow baking dish and bake at 300 degrees for 20 minutes or until golden brown.
