Preparation
1. Separate 1 large egg at room temperature and beat separately.
2. Blend 4 oz. 1% cottage cheese with 2 tbsp. skim milk.
3. Beat egg yolk with a dash of Morton Lite Salt, pepper, onion powder, and 1 tsp. green onion.
4. Mix egg yolk mixture with cottage cheese and beat well. Add 1/2 cup cooked asparagus.
5. Add this mixture completely into stiffly beaten egg whites.
6. Spray Pam in a small casserole. Put 1 slice diet bread, toasted and crumbled, into casserole.
7. Pour eggs in cottage cheese mixture over bread crumbs.
8. Bake at 375 degrees for 30-40 minutes until golden brown. Invert to serve.
