Sweet Potato & Vanilla Parfait
Preparation
1. Bake the sweet potato.

2. Scoop out the potato and place the insides into a mixing bowl.

3. Mix the margarine into the bowl.

4. Season the mixture with cinnamon and nutmeg to taste.

5. In a separate container, mix 2 packets of Very Vanilla pudding mix with 8 Oz. of skim milk until smooth.

6. In 2 parfait glasses (or double old-fashioned glasses) alternate between layers of the sweet potato mixture and the pudding mixture.

7. Refrigerate & serve as either a side or dessert.

8. Note: You can also use microwaved sweet potatoes.

* 2 tsp Lite Margarine
* 2 Packets of Very Vanilla Pudding & Shake Mix
* 8 oz Skim Milk
* Cinnamon & Nutmeg
