Preparation
1. Separate egg white and yolk. Beat whites until stiff, beat yolks until frothy.
2. Add vegetables to yolks; fold whites into yolk mixture.
3. Pour into a warm non-stick pan lightly coated with cooking spray.
4. Cook over medium heat for 10 minutes.
5. Remove to a shallow baking dish and bake at 300 degrees for 20 minutes or until golden brown.
