1 Protein, 1 Starch, 1 Fruit
Preparation
1. Prepare pancake mix as directed.
2. Drain cottage cheese in a sieve.
3. In a small bowl, mix cheese with sweetener and cinnamon to taste.
4. In a separate small bowl, mash berries and sweeten if desired.
5. Place both bowls in the microwave and warm.
6. Spray a non-stick pan with cooking spray and heat on medium-low.
7. Pour half of the pancake mix into pan, making a thin layer.
8. When the pancake starts to separate from sides of pan, spoon 1/2 of cheese mixture in a line down center of the pancake and fold with a spatula.
9. Repeat for the second blintz.
10. Top both blintzes with fruits.
