 1 Small Sweet Potato (Baked)
 2 tsp Lite Margarine
 2 Packets of Very Vanilla Pudding & Shake Mix
 8 oz Skim Milk
 Cinnamon & Nutmeg

Bake the sweet potato.

Scoop out the potato and place the insides into a mixing bowl.

Mix the margarine into the bowl.

Season the mixture with cinnamon and nutmeg to taste.

In a separate container, mix 2 packets of Very Vanilla pudding mix with 8 Oz. of skim milk until smooth.

In 2 parfait glasses (or double old-fashioned glasses) alternate between layers of the sweet potato mixture and the pudding mixture.

Refrigerate & serve as either a side or dessert.
