Fish Tacos
Ingredients
* 8 oz Tilapia
* 1 Green onion
* Diced
* ½ Jalapeño pepper (optional if you like heat)
* 1 small tomato diced
* ¼ medium red or green pepper
* Chopped cilantro
* Romaine lettuce chopped
* 6” Corn Tortilla
* (this counts as 2 starches, or you can use half to count as 1 starch)
* 1 Green onion

Preparation
1. Rub the fish with chili powder or cumin and lite salt (we like the Mrs. Dash Chipotle Seasoning).
2. Then cook by either baking it or sautee’ in a pan using the oil-free method.
3. Break apart the fish when it’s done.
4. Chop the veggies into small pieces.
5. Warm up the tortilla slightly, then assemble it.
6. Recipe makes 1 serving
7. This meal as-is counts as 1 Protein, 2 Starches, and 2 Veggies.
